Irresistible Pad Thai Recipe

Ingredients:
- 8 oz. rice noodles
- 2 tbsp. vegetable oil
- 1/2 cup diced extra-firm tofu
- 2 cloves garlic, minced
- 1/2 cup sliced bell peppers
- 1/2 cup bean sprouts
- 2 green onions, chopped
- 1/4 cup crushed peanuts
- 2 eggs, lightly beaten
For the sauce:
- 3 tbsp. tamarind paste
- 3 tbsp. fish sauce
- 3 tbsp. brown sugar
- 1 tbsp. soy sauce
- 1 tsp. chili flakes
Instructions:
- Cook the rice noodles according to the package instructions. Drain and set aside.
- In a small bowl, whisk together the sauce ingredients and set aside.
- Heat 1 tbsp. of vegetable oil in a large wok over medium-high heat. Add the tofu and stir-fry until golden brown. Remove from the wok and set aside.
- In the same wok, add the remaining vegetable oil and garlic. Sauté for a minute until fragrant.
- Add the bell peppers and bean sprouts to the wok and stir-fry for 2-3 minutes.
- Push the vegetables to one side of the wok and pour the beaten eggs onto the other side. Scramble the eggs until they are cooked through.
- Add the cooked noodles and tofu back into the wok. Pour the sauce over the noodle mixture and toss everything together until well combined.
- Remove from heat and sprinkle with green onions and crushed peanuts before serving.
