Ingredients:

  • 8 oz. rice noodles
  • 2 tbsp. vegetable oil
  • 1/2 cup diced extra-firm tofu
  • 2 cloves garlic, minced
  • 1/2 cup sliced bell peppers
  • 1/2 cup bean sprouts
  • 2 green onions, chopped
  • 1/4 cup crushed peanuts
  • 2 eggs, lightly beaten

For the sauce:

  • 3 tbsp. tamarind paste
  • 3 tbsp. fish sauce
  • 3 tbsp. brown sugar
  • 1 tbsp. soy sauce
  • 1 tsp. chili flakes

Instructions:

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, whisk together the sauce ingredients and set aside.
  3. Heat 1 tbsp. of vegetable oil in a large wok over medium-high heat. Add the tofu and stir-fry until golden brown. Remove from the wok and set aside.
  4. In the same wok, add the remaining vegetable oil and garlic. Sauté for a minute until fragrant.
  5. Add the bell peppers and bean sprouts to the wok and stir-fry for 2-3 minutes.
  6. Push the vegetables to one side of the wok and pour the beaten eggs onto the other side. Scramble the eggs until they are cooked through.
  7. Add the cooked noodles and tofu back into the wok. Pour the sauce over the noodle mixture and toss everything together until well combined.
  8. Remove from heat and sprinkle with green onions and crushed peanuts before serving.
